We’ve been excited about this offering and tasting for some time. If you don’t know Kaiyo (“Ocean” in Japanese) whiskies, you are in for a treat. The accolades and awards are too lengthy to reproduce here, but suffice it to say Master Blender Jeffrey Karlovitch is producing some of the most exciting whiskies in the world.
Jeffrey’s process involves taking Japanese new make malted barley spirit and maturing it in the finest Japanese Mizunara oak casks. After years of maturing in Japan, the casks spend a crucial 3-month sea voyage to Scotland. , an integral part of Kaiyo’s process with the motion of the seas’ waves. We’ll sample the following exceptional whiskies, all at 46%:
The Unicorn 10 year – A highly allocated part of the Wood Library Series. 5 years in Mizunara, then five additional years in Old Ex-Bourbon Barrels. Flavor profile: Pioneering & rare – clove, vanilla & nutty. Similar profile to Elijah Craig 18. Regularly $105, On Sale for $89
The 5 Wood – New is an innovative and rarely attempted blend of Mizunara, PX, Oloroso, Bourbon, & French barrels. Flavor profile: A complex harmony of candied fruit, raisins, ginger, vanilla fudge, and spice. Like Hibiki Harmony. Don’t let its great pricing fool you. The Sheri PX 4th Edition 10 Year – Aged in Pedro Ximenez (PX) and Mizunara oak barrels. Highly allocated, we are lucky to have access to it as only 450 cases are produced!

The Peated PX 4th Edition is 8 years old and is aged in 3 stages: from Madeira casks to Mizunara oak, and finally Pedro Ximenez.
